5 Ingredient, Chocolate Superfood Pudding
Yummy, easy and surprisingly healthy. The core of this recipe is the superfood chia seeds, which are rich in omega-3 fatty acids (an essential nutrient for brain development), and numerous other nutrients. However the property which makes this ingredient essential, is that chia seeds can absorb 10x their weight in fluids, converting it into a silky gel.
When you combine this gel, with delicious cocao, and naturally sweet and nutritious dates, you get a pudding that this Dad feels NO guilt about eating and sharing with his son.
* 1 1/2 cups milk (almond milk for paleo diet)
* 1/4 cup unsweetended cocoa powder
* pinch sea salt
* 5 pitted dates
* 1/2 cup chia seeds
To prepare, blend the milk (room temperature-ish), pitted dates, cocoa powder and sea salt together. I love using a mason jar and emulsion blender, or my magic bullet, to keep the mess/cleanup down.
Place mixture into a jar or container with a lid (if not already so), add the chia seeds, and shake well for 10-20 seconds. Seal the container and refrigerate.
Over the next hour, occasionally give the mixture a good shake, this will keep the chai seeds from clumping.
After 2-3 hours the chia seeds will have absorbed most of the mixture, and will be ready to eat, however I like to give it 8 hours or so (preparing the evening before I want to eat it), to reach a really rich and silky texture.
And now its ready to eat. If you can't eat it all the next day, don't worry, it will keep in the fridge for 2-3 days.
