Creamy Cauliflower & Egg Salad

Creamy Cauliflower & Egg Salad
Ingredients:
- 1 large head cauliflower, cut into bite-sized pieces
- 3 hard-boiled eggs, chopped
- 3 T. mayonnaise
- 3 T. sour cream
- 1/4 c. dill relish
- 3 T. chopped scallions
- 1 T. mustard
- 1 tsp. salt
- 1/4 tsp. ground black pepper
Directions:
- Bring a pot of salted water to a boil. Add chopped cauliflower; cover and cook for 7 minutes. Drain and rinse under cold water to cool and stop the cooking process.
- Combine mayonnaise, sour cream, relish, mustard, salt, and pepper in a bowl. Stirring until well blended.
- Combine cauliflower with dressing.
- Stir in scallions.
- Chill for at least 30 minutes to allow flavors to merry.
