Lime Jerk Grilled Chicken
I don't know about you, but BBQ season is my very favorite season. With fresh veggies ready-to-go from the garden, I love that I all I have to do is come up with a protein to complete an easy summertime meal. Insert this Lime Jerk Grilled Chicken recipe.
Ridiculously juicy chicken made up of lime juice, garlic, cilantro, and just a hint of heat. It's my go-to summer marinade, for sure.
Lime Jerk Grilled Chicken Recipe
- 2lbs boneless chicken thighs or drumsticks, you choose!
- 1/2 cup lime juice
- lime zest of one lime
- 1/4 cup olive oil
- handful of fresh cilantro, chopped
- 2 teaspoons chipotle chili powder
- 4 garlic cloves, finely chopped
- 1 tablespoon maple syrup
- salt and pepper to taste
Combine all ingredients in a Ziploc bag and shake to coat chicken evenly. Refrigerate, to let flavors merry, for a minimum of three hours. Grill and enjoy!
