No-Fail, Creamy, Garlicky Cauliflower Mash

Say hello to your new favorite mash, mashed cauliflower that is. 

How is it that a boring vegetable with a quarter of the calories of traditional mashed potatoes can be addictively delicious? We're not sure ourselves. It just is. 

No-Fail, Creamy, Garlicky Cauliflower Mash


  • 1 medium head of cauliflower, cut into florets
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 2 cloves garlic, chopped into quarters
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon chives for garnish (optional)


  1. In a medium saucepan, combine the cauliflower and chicken broth, bringing to a boil. Reduce the heat to a simmer, cover with a lid, and cook for 15 minutes or until the cauliflower is tender, but not completely falling apart. Remove from heat and drain well. 
  2. Meanwhile, heat butter in a frying pan over medium heat. Saute garlic for about 2 minutes until soft. Set aside.
  3. Using a food processor, add the cooked cauliflower, sautéed garlic, butter it was cooked in, Parmesan cheese, salt and pepper. Puree until smooth.
  4. Garnish with fresh chives and serve immediately.
