Whole30 Friendly Pumpkin Pie Chia Pudding

Pumpkin pie, it's a classic holiday treat. But what if you want your pumpkin fix without blowing your diet goals? Enter this pumpkin pie chia pudding.
Loaded with potassium, vitamin A, beta-carotene, protein, fiber, healthy omega 3s, and antioxidants - this recipe is as good for your body is it is for your palate. Enjoy it for breakfast, a pre-workout snack, or healthy dessert.
Whole30 Friendly Pumpkin Pie Chia Pudding
Ingredients:
- ½ cup raw pecans
- 1½ cup canned pumpkin puree
- 1 cup canned coconut milk
- 1/2 cup water
- 1 1/4 teaspoon cinnamon
- 3/4 teaspoon ground ginger
- 3/4 teaspoon nutmeg
- pinch of sea salt
- ¼ cup chia seeds
Directions:
- Heat a small pan over medium-low heat until hot. Add pecans and toast for 4 minutes, stirring constantly, until golden brown.
- Add toasted pecans, pumpkin, coconut milk, water, cinnamon, ginger, nutmeg, and salt to blender and process until smooth (1-2 minutes).
- Transfer pudding to a mixing bowl and stir in chia seeds until combined. Cover and refrigerate for 3 hours or overnight.
